Why Make my Easy Re-fried Bean Quesadilla’s?

These Easy Re-Fried Bean Quesadillas come together in less than 15 minutes which makes it the perfect go to meal for a busy work week and back to school!

These quesadilla’s are hearty, and satisfying! The kids love finger foods and so this has quickly become a family favourite:)

 

Tools Check: 

 

a Large skillet or frying pan

 

Ingredients Check:

 

8 Large Tortillas (to serve 4 adults)

1 can of vegan re-fried beans (Some contain lard-definitely not vegan!)

1 cup sweet yellow corn (I used frozen, run under hot water to defrost)

1 cup Daiya Mozzarella Style Shreds (or another favourite vegan cheese)

Chili powder

Garlic powder

Seasoning Salt

For the garnish:

1 cup Cashew Sour Cream (if you can’t make this yourself, Tofutti makes a pretty good vegan sour cream that is nut-free)

Fresh cut green onions

Diced tomato

Lettuce

  • 8 Large Tortillas to serve 4 adults
  • 1 can of vegan re-fried beans Some contain lard-definitely not vegan!
  • 1 cup sweet yellow corn I used frozen, run under hot water to defrost

  • Chili powder
  • Garlic powder
  • Seasoning Salt

  • Lettuce

Instructions

How to make Easy Re-Fried Bean Quesadillas

The Nitty-Gritty

  1. Heat your pan on medium heat
  2. Arrange 4 large tortillas on a cutting board or counter
  3. Spread one fourth of the can of re-fried beans on each tortilla
  4. Top each tortilla with 1/4 cup of corn
  5. Now use 1/4 cup of the Daiya Cheese on each tortilla
  6. Top these 4 tortillas with 4 more tortillas
  7. Fry these guys one at a time in your pan. Mine took about 4 minutes each side to crisp up and for the cheese to melt
  8. Remove from the pan to a cutting board and slice your tortillas into 6 pieces
  9. Top your Easy Re-Fried Bean Quesadilla with the Cashew Sour Cream, , Diced green onion, Fresh Tomato and any other toppings you love. I think Cilantro, jalapeno, olives and maybe even some diced ripe mango would be fantastic here!
