Crave-Worthy Vegan French Toast

This french toast is such a treat because it tastes absolutely delcious and it's good for you! Packed with healthy flax and topped with berries you just can't get a better breakfast!

Ingredients

  • 8 slices whole-wheat bread
  • 1/3 cup ground flaxseed
  • 1 cup plant milk unsweetened vanilla oat milk is delicious
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 2 bananas sliced
  • 2 cups strawberries sliced
  • 1/2 cup pure maple syrup optional

Instructions

  1. Preheat a nonstick pan over medium high heat.

  2. Mix together the ground flaxseed, plant milk, cinnamon, and vanilla. Set aside for 5 minutes.

  3. Take a piece of whole wheat bread and quickly dip one side into the flax mixture for less than a second.

  4. Dip the second side the same way then remove any excess flax mixture using clean fingers.

  5. Place the dipped bread into the pan and reduce the heat to low.

  6. Cook for 2-3 minutes a side, being careful not to burn the bread.

  7. Trasnfer to a plate and if desired, place the plate into a warm oven (170 degrees) while you continue to cook the other pieces of bread.

  8. Serve with freshly sliced fruit and defrosted berries. Add maple syrup if desired.
