Vegan Cinnamon Mug Cake with Cream Cheese Frosting

This mug cake reminds me of pound cake, cinnamon buns and spice cake all rolled into one perfect little bowl! It takes under 2 minutes to make, and it makes a delicious vegan afternoon snack or late night indulgence! Enjoy by yourself, or offer a few bites to a special friend! Either way it wont last long!

Ingredients

For the cinnamon mug cake

  • 3 tbsp all purpose flour
  • 1 tbsp brown sugar
  • 2 tbsp granulated sugar
  • 1/4 tsp baking powder
  • 1/8 tsp salt
  • 1/4 tsp cinnamon
  • 2 tbsp canola oil or other neutral tasting oil-DO NOT USE OLIVE
  • 1 tbsp apple sauce any flavour works here-you wont taste it
  • 2 tbsp Silk Soy Coffee Creamer or other plant based milk
  • 1/8 tsp apple cider vinegar
  • 1/4 tsp vanilla
  • 1 tbsp hot water

For the Vegan Cream Cheese Icing:

  • 1/4 cup vegan butter we use Becel
  • 1 cup icing sugar
  • 1/8 tsp citric acid
  • 1/8 tsp salt
  • 1/4 tsp nutritional yeast
  • 1/2 tsp vanilla
  • 1/2 tsp silk soy coffee creamer or other plant milk

Instructions

How to Make Vegan Cinnamon Mug Cake:

  1. Stir all of your dry ingredients together in a small bowl or coffee cup

  2. In a separate bowl mix your silk soy coffee cream with the apple cider vinegar and stir. It's meant to curdle.

  3. Add in your wet ingredients to the dry. Stir to combine.

  4. Microwave on high for 90 seconds. Allow to sit for 2 minutes before serving. This will ensure and even cook. 

How to Make Vegan Cream Cheese Frosting:

  1. In a small bowl beat your butter until soft using a spatula or a wooden spoon.

  2. Sprinkle the icing sugar, salt, citric acid and nutritional yeast on top.

  3. Mix your butter with the other dry ingredients.

  4. Add in your vanilla and cream and blend until smooth.

  5. Spoon over top of your vegan cinnamon cake-or get really fancy and pipe it out!
