Ingredients

  • 1 block extra firm tofu
  • 1/2 cup raw walnuts finely chopped
  • 1 tsp cumin
  • 1 tsp chipolte powder
  • 1 tsp oregano
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3 tbsp tomato paste
  • 1 lime squeezed

Instructions

  1. Place a large non-stick pan over medium heat.
  2. Open and drain the package of tofu.
  3. Add the raw walnuts to the pan and toast for 3-4 minutes, stirring often and being careful not to burn them.

  4. Add the tofu to the pan by breaking it into very small pieces. I do this by squishing it between my fingers as I drop it piece by piece into the hot pan.
  5. Sprinkle the tofu with the spices and stir.
  6. Reduce heat to low and cook for another 5 minutes to allow the spices to penetrate the tofu.

  7. Remove the pan from the heat.

  8. In a small bowl mix the tomato paste and fresh lime juice.

  9. Add the tomato paste and lime mixture to the tofu and mix to combine.

Recipe Notes

**Calorie and nutritional information is an estimate only.

If you are not used to eating salt-free, you can add up to 1 tsp of salt to this recipe.

Taste as you go and remember, it's always better to add salt to the food on your plate rather than during cooking.

You can also try adding more lemon or lime juice if you are transitioning to a salt-free diet.
